This recipe has been recreated by the founders of Monkey 47 and they distill the spirit for three months in earthenware crocks before it's reduced for bottling

The grapes are left to macerate on skins for 3 – 5 days before beingseparated and passed to old oak barrels where the wine rests for 6 months
