Smooth instead of rich, with a pleasant but not overwhelming umami flavor a light astringency. Organic matcha (in this case, the inner bag was certified, but we have not certified our own packaging) is generally very light in comparison with conventionally grown leaf which is heavily fertilized for great flavor
