The Cabernet is destemmed, berry sorted and then crushed into the half tonne open fermenters. A small amount of Cabernet (5%) was whole bunch fermented to bring extra lift and perfume to the wine. Malbec is destemmed to the small fermenters and hand plunged twice daily. Maturation in French Bordeaux shaped barrels; only 15% new oak to enhance
