Salt Rock Sauvignon Blanc 2025 Indian Harvest starts at first lightMade entirely from Sauvignon Blanc grown on the cooler, Atlantic facing slopes of the Helderberg in Stellenbosch. Grapes were handpicked in the early morning and, in an experimental twist, one third of the block received a light desiccation two weeks prior to harvest to retain acidity and concentrate flavour. After gentle destemming and pressing, fermentation was carried out cold in stainless steel to preserve fruit purity, followed by three months of
