Zyme O Color is a maceration enzyme recommended for the treatment of red grapes to optimize the extraction of intracellular compounds such as tannins, anthocyanins and aroma compounds from the skins during fermentation. Zyme O Color also leads to increased color stability, especially when combined with tannins, as well as enhanced mouthfeel. Since bentonite is a protein absorbing agent, bentonite must be added after
