Champ Divin is biodynamic (Demeter), and their 100% Pinot Noir comes from limestone clay soils in the Ctes du Jura. Hand harvested in early September, fully destemmed, fermented with native yeasts in stainless steel, then six months in neutral demi muids bottled with no fining or filtration. The wine is fresh and snappy, with crunchy black cherry, anise, violet,
