Fermentation takes 2 3 days and distilled in Column Stills. Aged tropically for 12 years in bourbon casks and a further 1 year in Ferrand casks. Fruity and spicy aromas of peach, red berries, orange peel and nutmeg. Evolving to white pepper, custard, lemongrass and pear skin.
